As I've said before, my mom is the original
preppy hostess. She went all out every single holiday, and Easter was no
exception. Each Easter morning, my brother and I would always wake up to giant
baskets filled with eggs, presents, candy, and a rainbow of Peeps. Luckily, my
brother wasn't much of a fan of the marshmallow candy, so he always gave me his
share. These cupcakes remind me of the baskets my mom made us, because they are
topped with a sweet little marshmallow Peep - the Easter candy you either love,
or love to hate.
I can’t believe that Easter is less than two
weeks away! If your time is limited – like mine often is, this cupcake recipe
is perfect for you. These Peeps Cupcakes are the solution to your Easter
planning madness – they are quick, easy and cute! Whether you'll admit it or
not, Peeps are truly the best Easter candy, so why not put them on a cupcake?
Use your favorite cupcake recipe and top with buttercream frosting. I used a piping bag with a special tip to make the frosting look like grass. Top with a Peep, and add decorative flowers with frosting.
I highly recommend buying an extra box of Peeps when you’re at the store… I definitely snuck a few while decorating these cute little cakes!
Ingredients:
12-18 baked cupcakes, cooled
1 cup butter, softened
1 1/2 tsp vanilla
1 bag of confectionery sugar
1-2 Tablespoons half and half
Directions:
- In a large bowl mix together the softened butter and vanilla until smooth and creamy. Slowly add half the bag of confectionary sugar and continue mixing on high speed until combined. Add the half and half, then slowly add the rest of the sugar. Whip until light and fluffy.
- Take 1/4 of the frosting mixture and place in a separate bowl. Add pink food dye until desired color.
- Add green food dye to the remaining 3/4 frosting mixture.
- Pipe frosting on cupcakes and place Peeps on top. Decorate with frosting flowers.
